Romanesco | Puro Import - 1 pc, ca. 750g

Romanesco, the lime-green cousin of cauliflower, brought to Berlin by Puro Import. It's hard to walk past: every floret is a smaller copy of the whole head, spiraling up to a point. Sold by the piece, so weight varies.

Mild, sweet and a little nutty, with a firmer bite than cauliflower. Roast the florets until golden, or boil them briefly and toss them through pasta with anchovy, garlic and chili. Don't overcook it, as it keeps its color and texture best with a short time in the heat.
