Pomodorini Confit | I Contadini - 230g

Cherry tomatoes grown a few kilometers from the sea, picked and cut by hand, then dried slowly at low temperature with a little sugar and sea salt, about twelve hours, until they shrink and turn sweeter. Jarred in extra virgin olive oil by I Contadini in Ugento, Salento. The jar is half tomato, half oil.

Concentrated, jammy and sweet, with a bright acidity underneath. Spoon them over burrata, pile them on crostini, or toss them through pasta with the oil from the jar. They are also very good on a pizza bianca.
