Paté di Pomodori Verdi | I Contadini - 100g

An uncommon spread made with green, unripe tomatoes, softened with eggplant and sharpened with capers, onion, apple vinegar and a little lemon, then bound with olive oil. I Contadini make it on their family farm in Ugento, in the south of Puglia.

Fresh and tangy, with a savory depth from the capers and a gentle sweetness from the eggplant. Spread it on toasted bread for bruschetta, spoon it over fresh cheese or into a sandwich with mozzarella, or stir a spoonful through warm pasta.
