Orecchiette | I Contadini - 500g

The "little ears" of Puglia, made with 100% durum wheat semolina and nothing else. I Contadini make them in Ugento, Salento, in the shape that the region has made by hand for generations.

Their cupped shape holds a sauce well, and the pasta keeps a pleasant bite. Cook them with cime di rapa, garlic and chili for the classic local dish, or with a simple tomato sauce and a spoonful of ricotta. They also work in soups and baked with vegetables.
