Crema di Cime di Rapa | I Contadini - 100g

Cime di rapa, the bitter turnip greens at the heart of Puglian cooking, cleaned by hand with a knife, blanched and finely ground with extra virgin olive oil. The jar is 74% greens and 23% olive oil, with salt and lemon juice and nothing else. I Contadini make it in Ugento, Salento.

Green, bitter and rounded by the oil. Loosen a spoonful with pasta water for an instant sauce for orecchiette, spread it on toast with an anchovy, or serve it alongside grilled sausage. It also works beautifully in a sandwich with fresh cheese.
