Cavolo Nero | Puro Import - 1 bunch, ca. 150g

Cavolo nero, the long, dark and crinkled Tuscan kale, brought to Berlin by Puro Import. It's a cold-weather green, and the one that belongs in a real ribollita. Sold by the bunch, so weight varies.

Deep, earthy and gently bitter, with a sweetness that comes out with slow cooking. Strip the leaves from the ribs, then braise them with garlic and chili, stir them into bean soup, or blitz them into a pesto for pasta. Keep the bunch in the fridge.
