Flavor Profile: A pale golden white with an expressive, almost electric nose - sour green apple, wet stone, white flowers, and a lemon zest edge. Expect sour apple candy, wet stone minerality, and white flowers. On the palate it is taut and razor-sharp, with a mineral tension that carries through to a long, refreshingly austere finish.
Origin: Touraine, Loire Valley, France - from Faverolles-sur-Cher, on soils of clay, sand, and silex over limestone, overlooking the Cher river.
Grapes: Menu Pineau with a splash of Sauvignon Blanc. Menu Pineau is a rare, ancient Loire variety - once widely grown, now nearly forgotten.
Process: Fermented in tank and raised in neutral barriques, from a 50 to 60-year-old vineyard on limestone. Organic farming, indigenous yeasts, no added sulfite.
About the Producer: Jean-Christophe grew organic grapes on his beautiful property in Faverolles-sur-Cher for years, selling much of his harvest to producers in the surrounding area, before eventually deciding to vinify under his own name. He staged with Pascal Potaire of Les Capriades, Hervé Villemade, and Jérôme Lenoir before striking out on his own. A quietly exceptional vigneron, working on just 5 hectares, making wines that speak with rare clarity and precision.
