Four vegetables, one jar: red and yellow peppers, fennel, carrots and cauliflower, all grown by I Contadini on their own fields in Puglia and hand-cut within hours of harvest. Each is prepared separately before being layered together, then dressed in a gentle sweet-and-sour of apple vinegar. No preservatives, no colorings, nothing but the vegetables and the brine.
