Flavor Profile: Schlado pours with a soft, dusty red and invites with fresh cherry, red berry fruits, and delicate herbal undertones. Beneath the fruitiness lies a subtle savoury edge - a hint of woody spice and gentle liquorice - giving it a slightly earthy finish that keeps it lively without weight. Light in body, fresh, easy-drinking, yet layered enough to linger.
Origin: Franken (Franconia), Germany - a blend from organic vineyards farmed by Wein Goutte!
Grapes: Primarily Regent and Domina, with portions of Schwarzriesling (Pinot Meunier), a splash of Pinot Gris, and a small field-blend of red PiWi varieties.
Process: A playful field blend: some grapes foot-stomped, others destemmed; macerations ranging from overnight to five days depending on variety. The wine matures partly in stainless steel, partly in used barrels. Bottled unfined and unfiltered, with minimal added sulfur.
About the Producer: Wein Goutte! is the project of two former chefs turned vignerons, cultivating around 3.5 to 4 hectares organically in Franconia on soils of Gipskeuper. Their background in kitchens and gastronomy drives a playful, experimental wine philosophy - combining tradition and curiosity, respecting terroir while letting nature guide the process.
Pairing Suggestions: A versatile table companion. Serve lightly chilled alongside charcuterie, mushroom dishes, grilled vegetables, or a simple roast chicken. Its freshness and light body make it equally at home as an aperitif.
