Flavor Profile: Silky and rounded, with a mineral backbone that keeps it fresh.

Origin: Faugères, Languedoc, France: a single 3-hectare plot on a hilltop at about 450 meters in Cabrerolles, on very old, fractured schist.

Grapes: Grenache Blanc, Roussanne and Marsanne.

Process: Each variety is hand-picked separately into crates and fermented with native yeasts. No additives and no added sulfites. The vines are fed with manure and protected only with mineral and plant-based treatments.

About the Producer: Sybil Baldassarre founded La Graine Sauvage in 2015, after almost twenty years searching for the right site in the Faugères hills. The vineyard sits surrounded by woods and scrub, and most of the work is done by hand.

Pairing Suggestions: Roast chicken, creamy fish dishes, fresh goat's cheese, or a platter of cured meats.
