Radicchio | Gutes aus Gretes Garten - 1 head

A head of radicchio from Grete Peschken's certified organic farm in Stierow, Mecklenburg-Vorpommern, about two hours north of Berlin. Grete farms regeneratively, building up her soil rather than wearing it down, and you may know her from her Thursday stall at Kollwitzplatz.

Crisp and bittersweet, with leaves as good to look at as to eat. Slice it thin into a salad with pear or orange, walnuts and a sharp dressing, or cut it in wedges and grill or roast it until the edges caramelize and the bitterness softens. Keep it in the fridge wrapped in a damp cloth.
