The first oil of the season, and the one olive lovers wait all year for. As soon as the harvest comes in, Agrestis hand-picks the olives, mills them the same day and gets the fresh oil straight into the bottle, catching it at its most vivid. This one is a blend of the best cultivars from their groves in the Iblean Mountains, rather than the single-variety Nettar'Ibleo.
Almost luminous green, with a big fruity nose of tomato, artichoke, basil and wild herbs, and a lively, peppery kick that tells you the oil is young and loaded with polyphenols. Use it raw and generously while it lasts: over bruschetta, soups, grilled vegetables, salads and roasted meats. Like Beaujolais Nouveau, novello is a fleeting seasonal pleasure, so enjoy it fresh.
