Beetroot | Gutes aus Gretes Garten - ca. 500g

Red beetroot with its leafy tops still on, from Grete Peschken's certified organic farm in Stierow, Mecklenburg-Vorpommern, about two hours north of Berlin. Grete farms regeneratively, certified organic, and also sells at her Thursday stall on Kollwitzplatz.

Earthy and sweet, with deep red flesh. Roast it whole in foil until tender, grate it raw into a salad with apple and lemon, or boil and slice it with goat's cheese and walnuts. Don't throw away the greens: cook them like chard. Cut the leaves off before storing so the root stays firm. Sold by the piece, so weight varies.
