Flavor Profile: Deep ruby with purple glints, Dynamite opens with an intense hit of dark cherry, wild blackberry, and iron-rich minerality. Round dark cherry notes are complemented by a herbal freshness and a profound mineral finish. Full and powerful in structure, yet kept lively by a crackling acidity that gives it an almost electric verticality. This is a wine that earns its name.
Origin: AOP Faugères, Languedoc, France - from ten small parcels around the commune of Laurens, on soils composed of schist, marble, and limestone.
Grapes: Cinsault, Carignan, Grenache - from 50-year-old vines planted in marble.
Process: A long maceration of around 50 days produces a full, powerful, and deeply savoury wine, balanced by an acidity that brings vertical lift. Grapes are hand-harvested, de-stemmed, and fermented by gravity using indigenous yeasts, with no oenological additives or added sulfur.
About the Producer: The name "Dynamite" is a direct nod to the marble-rich soils of Faugères - and to the old vignerons who used dynamite to blast through the stone and plant their vines. Alexandre Durand founded Peira Levada in 2018, farming his parcels according to biodynamic and organic principles, maintaining permanent ground cover to protect soil structure and encourage microbial life. Raw, committed, and completely uncompromising.
Pairing Suggestions: Made for the table. Serve with slow-cooked lamb, wild boar, aged Languedoc cheeses, or a hearty daube. Decant if opening young - it will reward patience.
